Welcome to Herb and Spice 101!

If I ever open a culinary school for future chefs or casual cooks, this class would be in the first semester. They’re a fundamental element of flavor, as intrinsic and important to cultural flavor as any solid or liquid recipe component. In other words, without herbs and spices, food falls flat. My culinary education didn’t have a specific class for this, though we were shown them through other lessons. But it’s critical to understand how to master these flavors in a home kitchen, since it adds a cost-effective and low-calorie boost of flavor in pretty much every recipe.

When outlining this eCookbook, I realized that this manual could easily be 600 pages. There are too many herbs, spices and blends to include in a cohesive recipe book. To help narrow down the field, I surveyed family, friends and students in my local cooking classes. With about 100 ballots complete, I was able to focus on the 20 herbs and spices that caused the most head-scratching. Those herbs and spices have dedicated sections in this cookbook.

Because I narrowed focus, commonly used and understood herbs and spices won’t appear in here. For example, consensus agreed that herbs such as basil and parsley were easy enough to use without a recipe. Also, spices such as cinnamon and ground pepper were excluded. Instead of including the common, I reached out to embrace the lesser-used, more enigmatic tenants of your spice rack.
